Herb-Roasted Turkey with Cranberry Sauce
Ingredients:
- 1 whole turkey (size according to the number of guests)
- 1/2 cup unsalted butter, softened
- 2 tablespoons chopped fresh rosemary
- 2 tablespoons chopped fresh thyme
- 2 tablespoons chopped fresh sage
- Salt and pepper to taste
- 2 cups fresh cranberries
- 1 cup sugar
- 1 cup water
Instructions:
- Preheat your oven to 325°F (165°C).
- Rinse the turkey inside and out and pat it dry with paper towels.
- In a bowl, mix together the softened butter, rosemary, thyme, sage, salt, and pepper.
- Gently loosen the turkey's skin from the meat and spread the herb butter under the skin and all over the turkey.
- Place the turkey on a rack in a roasting pan and cover it loosely with foil.
- Roast the turkey in the preheated oven for about 3 to 4 hours, depending on its size. Make sure to baste it with the juices that collect in the pan every 30 minutes or so.
- While the turkey is roasting, prepare the cranberry sauce. In a saucepan, combine the cranberries, sugar, and water. Bring to a boil, then reduce the heat and simmer for about 10-15 minutes until the cranberries burst and the sauce thickens. Remove from heat and let it cool.
- About 30 minutes before the turkey is done, remove the foil to allow the skin to crisp up and turn golden brown.
- Use a meat thermometer to ensure the turkey has reached an internal temperature of 165°F (74°C) in the thickest part of the thigh.
- Once done, remove the turkey from the oven and let it rest for about 20-30 minutes before carving.
- Serve the herb-roasted turkey with the homemade cranberry sauce on the side.
