 Herb-Roasted Turkey with Cranberry Sauce

Ingredients:

  • 1 whole turkey (size according to the number of guests)
  • 1/2 cup unsalted butter, softened
  • 2 tablespoons chopped fresh rosemary
  • 2 tablespoons chopped fresh thyme
  • 2 tablespoons chopped fresh sage
  • Salt and pepper to taste
  • 2 cups fresh cranberries
  • 1 cup sugar
  • 1 cup water

Instructions:

  1. Preheat your oven to 325°F (165°C).
  2. Rinse the turkey inside and out and pat it dry with paper towels.
  3. In a bowl, mix together the softened butter, rosemary, thyme, sage, salt, and pepper.
  4. Gently loosen the turkey's skin from the meat and spread the herb butter under the skin and all over the turkey.
  5. Place the turkey on a rack in a roasting pan and cover it loosely with foil.
  6. Roast the turkey in the preheated oven for about 3 to 4 hours, depending on its size. Make sure to baste it with the juices that collect in the pan every 30 minutes or so.
  7. While the turkey is roasting, prepare the cranberry sauce. In a saucepan, combine the cranberries, sugar, and water. Bring to a boil, then reduce the heat and simmer for about 10-15 minutes until the cranberries burst and the sauce thickens. Remove from heat and let it cool.
  8. About 30 minutes before the turkey is done, remove the foil to allow the skin to crisp up and turn golden brown.
  9. Use a meat thermometer to ensure the turkey has reached an internal temperature of 165°F (74°C) in the thickest part of the thigh.
  10. Once done, remove the turkey from the oven and let it rest for about 20-30 minutes before carving.
  11. Serve the herb-roasted turkey with the homemade cranberry sauce on the side.
